I’ve made these chocolate peppermint cookies for the past few years, and not only are they easy, but you’ll have people asking you for the recipe (I know I have received several requests in the past).
But before I get to the cookies, remember my JOY sign I showed you the other week…
I was looking for some photos yesterday and look what I spotted. That’s the original sign! I didn’t think I had any photos of it. This was our first Christmas in our new home. You can see all the natural pine on all the edges and the twine. It just got too country looking for how I decorate now.

I just baked these on Tuesday and all but a few have ended up in the freezer. If we have unexpected company, I can just take out what I need and let them sit at room temperature for 15-20 minutes and they’re good to go.
