Do you like to eat fish? I think most people either love it or hate it. For myself, I love fish so long as it doesn’t taste fishy! I know, crazy isn’t it. Next question, have you ever had catfish? I’ll have to be the first to admit that they sure are ugly, but they taste great; and they don’t have that fishy taste that I really detest.

I bought In The Kitchen With Rosie back when it was first published in 1994. Rosie Daley was once Oprah’s private chef and the recipes in this book are really delicious. This un-fried catfish recipe is one of my favorites from the book. It’s easy, delicious and healthy.
I use a pie dish to mix the cornmeal, dried thyme and dried basil.
I buy fresh catfish and where I purchase them, they don’t have small four-ounce sized fillets. Most of their fillets are about a 1/2 pound. So I buy two fillets and cut them in half. After rinsing and patting dry with a paper towel, I add the seasonings only to the top side.
After seasoning, take each fillet and dredge it in the cornmeal mixture on both sides. As you can see, I place foil on a baking sheet and spray it several times with cooking oil to coat the foil. Then add the fillets, spice-side up. Add a little dusting of paprika on each fillet and lightly spray with cooking oil. Then bake until it’s golden brown and flakes easily.
I like serving it with a corn muffin and my Cannelloni Bean Salad.
