These bars were such a big hit and I’ll definitely be making them more often. Every now and then I go through my collection of recipes and pitch those that I know I’ll never make; but when it comes to having raspberries in it, I save them all.
I used vanilla chips for this recipe.
The melted butter mixture will take a bit of stirring to get everything worked in smoothly. As you can see, I just used a wooden spoon. Always try and use the best ingredients you can afford to purchase when you bake. Try using butter instead of margarine and use pure extract rather than imitation. It will all make a huge difference in texture and taste.
This is the unbaked batter dropped on top of the raspberry jam. When it bakes, it will all smooth out and cover the entire top.
