Can I tell you that I really love to cook…..when I’m in the mood to do so! Yeah, that last part is the real killer, isn’t it! Sometimes we literally don’t have the time because we rush, rush, rush; and other times, we’re simply not in the mood to do much cooking. And for me, it seems the older I get, the less I’m in the mood to cook.

So these days I’m always collecting great recipes that don’t take a lot of time. I found this recipe so many years ago in our local newspaper and I’ve adapted it for me. From start to finish, it’s only 30 minutes and it’s so full of flavor. You can use all fresh ingredients, or you can use all precut and frozen if you choose to do so.
Because this meal is all in one dish, a crusty Italian bread is the only other item that really goes great with this recipe.
