If you love chicken and avocado, as well as quesadillas, you will love this simple and easy recipe! It’s melted cheese over cooked chicken and creamy avocado, topped with raspberry or peach salsa or just plain tomato salsa; couldn’t be better! This recipe cooks up fast for lunch or for dinner.

Preheat your oven to 200 degrees or your panini grill. After cutting up your chicken into approximately 1/2 inch pieces, cook in a skillet that has been lightly greased. I usually use a touch of Light olive oil.
Once everything has been added to the tortilla, place another tortilla on top and put press the lid down until the cheese melts.
Using a large spatula, transfer the quesadillas to a plate and cut in half.
I’ve tried different salsas, but I always go for the jars of salsa that are sold in speciality stores. The one above was purchased in a small store in Grand Haven, Michigan, but most cities have speciality stores and I find they carry some of the best.
