The hot days of summer call for quick and easy recipes, like this black bean and onion appetizer I have for you today. It literally takes only minutes to make, but for the full enhancement of flavor you really need to make it a day ahead of time and let it chill in the refrigerator.

Drain and lightly rinse black beans.
Use good olive oil.
Chop onions and salt and pepper to taste. Mix everything together and let chill overnight.
